Quick Cream Of Tomato Soup
Ingredients
4 Cups Milk
2 Tablespoons Flour
¼ Teaspoon Bicarbonate of Soda
500g Tomatoes
2 Tablespoons Butter
Salt to taste
Pepper to taste
Fresh Basil For Garnish
Method
Make a white sauce of the Milk, Flour and Butter.
Cook the tomatoes separately until tender, mash through a coarse sieve.
Just before serving, add Bicarbonate of Soda to the tomatoes, whisking thoroughly.
Stir the tomatoes into the White Sauce, stirring constantly.
Serve at once. (If soup starts to curdle, highly likely beat thoroughly with whisk).
Optional
Garnish with Fresh Basil
