Potato Barley Soup
Ingredients
4 Potatoes
500g Soup Meat.
3 Tomatoes
½ Cup Barley
1 Turnip
1 Carrot
2 onions
2 Tablespoons Oil
8 Cups water
Salt to taste
Pepper to taste
Pinch Sugar
Croutons to garnish
Rasher of Bacon and celery leaves to garnish
Method
Put Meat (Chopped or cut into small pieces, into a saucepan, brown in oil)
Add water, bring to the boil. Lower heat allow to cook gently for about 2 hours.
Strain, return to saucepan over heat, add barley and finely chopped vegetables.
Cook until vegetables are soft, season with salt and pepper, add a pinch sugar.
Just before serving add leftover meat, with all bones removed.
Add little finely chopped Parsley.
Optional
Serve With Croutons Celery Leaves and Rasher of Bacon
